This three-ingredient Caramel Popcorn is absolutely addictive, and it's ready in no time!
And as with my Caramel Nut Brittle recipe, you can create countless variations by choosing different types of nuts and different flavors of Amyzing Sea-Salt Caramel Pops.
Here we're using toasted walnuts and Amyzing Original Sea-Salt Caramel Pops.
Here's what you'll need:
8 cups of Popped Corn (Pop your own or use your favorite prepared popcorn.)
8 of your favorite flavor of Amyzing Sea-Salt Caramel Pops (or 8 oz of another good quality salted caramel hard candy.)
1-1/2 cups of your favorite Nuts, either toasted or dry-roasted
Next, melt the caramel. The fastest and easiest way to do this is in the microwave and then transfer the hot caramel to a large non-stick pan over medium heat on the stovetop.
In a large coffee mug or other microwave safe dish, microwave the caramel pops on high for 30 second intervals, stirring after each. When the caramel begins to soften and falls off of the sticks, switch to 10 - 15 second intervals to prevent burning.
(You could also do this in a non-stick pan over medium low heat on the stovetop, but don't walk away because it can burn quickly.)
When the caramel on the stovetop is hot and bubbly, add the nuts and stir to coat. Then add the popcorn, folding gently until the popcorn is thoroughly and evenly coated. This takes a few minutes so be patient!
Then turn the mixture out onto a baking sheet lined with parchment or a silicone mat.
Once it is completely cool, break the Caramel Popcorn into pieces and serve!
