We're working with Original Sea-Salt Caramel Pops and toasted Walnuts.
Here's what you'll need:
1-1/2 cups of nuts
5 to 6 Caramel Pops (depending how sweet you like your brittle) *
* You could also use 5 to 6 ounces of another good quality Salted Caramel Hard Candy.
First, toast the nuts in a dry pan on the stovetop.
(You can skip this step if your nuts have already been dry-roasted or toasted, or if you're using delicate flavored nuts like Macadamias).
Next, melt the caramel. The fastest and easiest way to do this is in the microwave, and then transfer the hot caramel to a non-stick pan over medium heat on the stovetop.
In a large coffee mug or other microwave safe dish, microwave the caramel pops on high for 30 second intervals, stirring after each. When the caramel begins to soften and falls off of the sticks, switch to 10 - 15 second intervals to prevent burning.
(You could also do this in a small non-stick pan over medium low heat on the stovetop, but don't walk away because it can burn quickly.)
Add the nuts to the hot caramel on the stovetop. Stir until the nuts are evenly coated in caramel. Turn the mixture out onto a baking sheet lined with parchment or a silicone mat. Press into an even layer and allow to cool.
When the brittle is completely cool, break it into pieces and enjoy!
